Sous Chef on beautiful Quadra Island!
The Heriot Bay Inn is seeking applications for a full time - part time Sous Chef. This historical resort is situated on Quadra Island in beautiful Heriot Bay. Two kitchens in one: we offer fine dining in Herons Dining Room and classic pub fare in the HBI Pub. We have an excellent kitchen facility and our team works at a very high level of professionalism.
The Sous Chef will assist the Executive Chef in the day to day management of the kitchen. You will provide superior customer service and specialized services to the kitchen and will direct and oversee the work of others within the kitchen.
The Responsibilities Of The Sous Chef Position Include:
Assist the Executive Chef in all aspects of the day to day operation of the kitchen
Overall management of the kitchen ensuring timely and efficient operation in the absence of the Executive Chef.
Oversee and participate in the production, preparation, and presentation of all food services
Monitor staffing levels and reports to Chef any changes that may be required
Responsible for Inventory control and assist with food and labour costing
Conduct and oversee monthly inventory - Participate in menu planning as required
Maintain and enforce the highest standards of quality service and appearance of food items that leave the kitchen in order to achieve culinary excellence.
Provide high quality food in a professional and efficient manner and in compliance with all health and safety regulations
Develop and motivate staff and provide culinary leadership - Conduct on site orientation and staff training. Supervise kitchen shift operations and ensure compliance with all Hotel policies
Ensure that the Team understands the expectations and parameters and continually coach and train to ensure that these expectations are met
Establish and maintain open, collaborative relationships and ensure that Team members do the same both within the department and with the front of house Team
Set a positive example to ensure we are providing exceptional customer service at all times

Qualifications & Experience:
A minimum of 2 years assist\supervisory experience in a full service Hotel or similar culinary environment including banquets
A minimum of 2 years working as 1st Cook experience - Excellent communication (strong written, oral and listening), interpersonal, and customer service skills
Be self-motivated, strong integrity, team player and able to lead others
FOODSAFE Certification is mandatory - Knowledge of health and safety regulations
